Today is National Bavarian Cream Pie Day! A fluffy alternative to yesterday’s National Cake Day. What do we love about the holidays? You guessed right – food, family, and friends.

Trivia: Bavarian Cream or (Bavarois) is a cold egg custard thickened with gelatin then mixed with whipped cream, vanilla, fruit puree or other flavorings. Marie-Antoine Carême, perhaps the first celebrity chef, is generally given credit for its creation in the early 19th century. Enough about that for you can’t eat history. Here’s the recipe below!

Bavarian Chocolate Cream Pie
An easy to make Bavarian Chocolate Cream Pie for the holidays!

Ingredients
  1. Crust
  2. 1 ¼ cup – Nabisco Honey Maid Chocolate Graham Crackers, crumbled
  3. ¼ cup – sugar
  4. ¼ cup – softened butter (salted)
  5. Filling
  6. ½ cup milk
  7. ½ cup heavy cream
  8. ½ cup sugar
  9. 4- Egg yolks
  10. Pinch of salt
  11. 2 oz – cold water
  12. 1 tbsp – Gelatin
  13. 1 tsp – vanilla
  14. 3 – Egg whites, stiffly beaten
  15. 1 cup – whipped heavy cream
  16. ½ cup – grated semi-sweet chocolate
Instructions
  1. For the Crust
  2. In a food processor, combine crumbled grahams, sugar, and butter cut into bits. Pulse until evenly mixed. Press into 9 inch pie pan on the bottom and sides. Cover and set in the freezer for 15-20 minutes.
  3. For the Filling
  4. In a heavy sauce pan, bring milk and cream to a boil to scald. Better yet, carefully watch milk and cream as it heats. When surface visibly starts to move, turn off the heat. In a large mixing bowl, mix eggs yolks, sugar and vanilla until fairly smooth. Gradually add hot milk and cream while whisking constantly (tempering) to prevent scrambling the eggs. Transfer the mixture to a double boiler and cook stirring frequently until the custard coats the back of a spoon. At this point, if you let the mixture cool and put it in an ice cream maker you would have the most popular flavor in the world – vanilla. Anyway, remove custard from heat and allow cooling. Sprinkle gelatin in 2 oz. of cold water and let stand for 3 minutes. Add gelatin to vanilla custard and stir until dissolved. Cover with plastic wrap, poke 2-3 holes in plastic with a toothpick, then refrigerate for 30-45 minutes until thickened. Fold* egg whites, whipped cream and ½ of the chocolate into custard mixture. Pour liberally into your chocolate crust. Top with other ½ of chocolate, then chill until firm 2-3 hours. Hope you enjoy! Chef TJ
Notes
  1. *Note: Folding is simple: dump egg whites and whipped cream into custard mixture. With a rubber spatula, scrape along edge of mixing bowl turning inward and over, gently and repeatedly while turning the bowl with your other hand. The idea is to mix completely without deflating the mixture.
