Today is National Fritters Day 2017. These delicious fried morsels are quintessentially Southern and served up as a savory snack or appetizer. A basic batter for corn fritters consists of corn kernels, egg, flour and milk. Anyway, this is what I thought Corn Fritters were. As the Corn Fritter spread across the U.S. it begins to mature into a favorite at restaurants across the Country. This is a delicious recipe for Corn Fritters that was once enjoyed at the Peter Pan Inn Baltimore.

Ingredients
  1. 1-1/4 cups flour
  2. 1/2 teaspoon salt
  3. 3 tablespoons sugar
  4. 1-1/2 teaspoons baking powder
  5. 1 egg, beaten
  6. 1/2 cup milk
  7. 1 cup whole corn kernels, drained
  8. Powdered sugar, if desired
Instructions
  1. Sift the dry ingredients together.
  2. Add the wet ingredients to the dry and mix well but take care not to over mix.
  3. Drop by spoonfuls into hot oil and fry until golden brown.
  4. Drain on paper towels and dust with powdered sugar if desired.
