Today is National Comfort Food Day 2017!

We’ve been rockin’ comfort foods since the autumn season begun. How can it be that just by looking at photos of mouthwatering comfort foods my weight bounced up a pound? Digital scales are never accurate during the holiday season, right? (Smiles)

Southern Comfort Foods

Previously I had written about cooking collard greens and serving with fried chicken and cornbread, a true southern tradition. One of my greatest accomplishments this year was learning how to cut collards before cooking and then again prior to serving. Chef TJ’s instructions made it an easy and fun task and I enjoyed sharing this new knowledge with you.

For those following Chef Thomas Jones Recipes, he always signs his name to the recipes we use on our blog. Otherwise, recipes are designated as from the kitchen of Roadtrips R Us or from credited sources. Note: He writes 99.9% of the post about food holidays and cooking instruction in general. My foodie ideas are from family memories and a recipe box filled with goodies from year’s pasts. Chef TJ does approve these recipes prior to their being posted. Quality control is the word that best describes this process. We want all our recipes to be consistently delicious and as a chef and cooking instructor, he’s best suited for making this determination.

Moving forward – today’s recipe is for making Jalapeno Cornbread. The reason is for National Comfort Food Day we’re having country fried chicken, mashed potatoes and gravy, collard greens and jalapeno cornbread with sweet tea and pecan pie for dessert. Here’s the recipe for collard greens from a previous post about comfort foods.

Jalapeno Cornbread Recipe

A delicious southern cornbread recipe!

Ingredients
  1. 1-1/2 c. corn meal
  2. 3 tsp. baking powder
  3. ½ tsp. salt
  4. 3 eggs
  5. 1 c. sour cream
  6. 1 c. grated cheese
  7. 1 sm. (7 oz) can cream style corn
  8. 1/4 c. chopped Jalapeno peppers
  9. ½ c. shortening
Instructions
  1. Sift dry ingredients. Add remaining ingredients and mix well. Fill greased muffin pans half full and bake 20-25 minutes at 450 degrees.
