Peach Melba

Ingredients

  2. 1- 10 oz package frozen Raspberries
  3. 1/3 cup current jelly
  4. 1/8 teaspoon salt
  5. 1 ½ teaspoons corn starch
  6. 3 – Large peaches, peel and halved
  7. 1 quart – vanilla ice cream
Instructions
  1. Procedure
  2. Thaw berries and puree in food processor
  3. Combine pureed berries, jelly and salt and medium sauce pan; bring to a boil stirring constantly until jelly is melted.
  4. In a cup, combine corn starch and one tablespoon water. Stir into jelly mixture. Cook until slightly thickened.
  5. Allow to cool.
  6. Put one peach half rounded side up in sherbet glasses. Cover with ice cream and top with Melba Sauce. Serves 6

  1. Try with your favorite cupcake or cake recipe.

Crème Anglaise

  2. Milk -8 oz
  3. Heavy Cream -8 oz
  4. Vanilla 1 tsp or to taste
  5. Sugar -3 oz
  6. Egg yolks- 4 each
  7. Sugar- 2 oz
Instructions
  1. Procedure
  2. 1) Combine milk, heavy cream, 3 oz sugar, and vanilla in a heavy sauce pan. Bring to a simmer over medium heat. Keep an eye on this for once it comes to a boil it will end up all over your stove.
  3. 2) While this is heating combine egg yolks and remaining sugar in a medium mixing bowl and whisk until smooth.
  4. 3) Gradually combine cream mixture to egg yolk mixture while continually whisking.
  5. 4) Place mixing bowl over a large pot of simmering water and cook stirring frequently until mixture is stick enough to coat the back of a spoon.
  6. 5) Turn off the simmering water and place pot on the back of your stove to keep warm.
Notes
  1. Toppings
  2. Fresh Strawberries – 7-10 per person – washed, trimmed and sliced into halves or quarters depending on their size. Place the strawberries in a mixing bowl and toss with sugar approximately 1 tablespoon and set aside for ten minutes to macerate them.
  3. Caramel – I would give you a recipe but it would be easier to buy it at the store when you purchase your strawberries.
  4. Powdered Sugar to dust the finished dish with preferably in a large dredge or shaker

Italian Donut Fritters

  2. Oil, for deep frying
  3. 1 cup all-purpose flour
  4. 1 pound ricotta cheese
  5. 2 eggs
  6. 1 teaspoon vanilla extract
  7. 1/4 teaspoon ground cinnamon
  8. Pinch ground nutmeg
  9. 1 tablespoon baking powder
  10. 1 to 2 cups granulated or cinnamon sugar, for rolling
  11. Heat the oil to 350 to 365 degrees F.
Instructions
  1. Combine all ingredients, except the rolling sugar, with an electric mixer until smooth. Drop by tablespoons into hot oil. Fry fritters until cooked thorough and golden brown, about 6 to 8 minutes.
  2. Remove from oil with tongs and drain on a cookie sheet lined with paper towels. While still very hot, roll each ball in granulated sugar.
  3. Serve warm or at room temperature.
  4. You can also add diced apples, bananas, or any other fruit to the recipe.
