  2. 1 lb Sharp Cheddar, cubed
  3. 1/2 lb Swiss, cubed
  4. 1/2 lb Mozzarella, cubed
  5. 1 Fresh Jalapeño, sliced
  6. 1/2 cup Olive Oil (or as needed)
  7. 1 Tbsp Coarsely cracked Black Pepper
  8. 2 Tsp Garlic Salt
  9. 1 Tsp Onion Powder
  10. 2 Tsp Herbes de Provence, (Click on the Crock Above)
  11. 2-3 Dashes – Worcestershire Sauce
  12. 2-3 Dashes – Tabasco Sauce
  13. 2-3 oz Brandy
  14. 1-2 oz Sherry

  2. Using a medium die on your meat grinder, alternate the cheeses along with the slices of jalapeno grinding them into your mixing bowl. Using the paddle attachment, mix the cheeses on the lowest speed for 30-45 seconds until they begin to form a ball. With the motor running, slowly add the olive oil until it starts looking like a batter on the dry side. Add half of the remaining ingredients and mix to combine. Taste the cheese. How is the texture? Is it spicy enough? Does it need more liquid to be spreadable? Remember you can always add ingredients without any problem. Doubling a recipe because you put in too much of anything, especially salt, is a pain the the rear. When I make this spread, I want the Swiss and Cheddar to stand out, the heat and the pungency of the black pepper to be known and the brandy to meld everything together. Add the other half of the ingredients, or call it quits, you decide.
  3. The three cheeses given are just examples. Use any cheese you like and definitely rid your refrigerator of any left overs. Any oil will work, but I prefer Pomace Olive Oil. As far as seasonings go, the sky is the limit. If you have a wine and cheese combo that you love, substitute the wine for the sherry or brandy. Herbes de Provence are not necessary, but this blend containing savory, fennel, basil, thyme and sometimes lavender can be used in a multitude of dishes. Making this cheese spread is fun when you involve friends and family. Let everyone taste as you go and put in their two cents. If you don’t like it, form it into a ball, roll it around in nuts and give it to someone on the bottom of your Christmas list.

Velveeta Mac N Cheese

  2. 3 cups heavy cream
  3. 1 lb Velveeta, cubed
  4. 1 tbsp salt or to taste
  5. 4 oz shredded Cheddar
  6. Bread crumbs as needed
  7. 1/2 lb cooked pasta (Macaroni, Penne, or Farfalle)
  8. 2 oz melted butter

  2. In a heavy sauce pan, scald cream and turn off the heat. Add Velveeta and let melt, stirring occasionally. Add salt to taste, then allow to cool. Place cooled cooked pasta in your favorite baking dish and add cheese sauce. Mix well, then cover with shredded Cheddar and sprinkle with bread crumbs. Drizzle butter over bread crumbs,then cover with aluminum foil and bake in a 350 degree oven for 30 minute., Uncover and continue cooking 10-12 minutes until golden brown and bubbly. As we said, you may add anything you like to jazz up this recipe, but this one is always a crowd pleaser. Chef TJ

Buttermilk Biscuits

  2. 2 cups all-purpose flour
  3. 1/2 teaspoon salt
  4. 1/4 teaspoon baking soda
  5. 1 tablespoon baking powder
  6. 1/2 cup vegetable shortening
  7. 1 cup buttermilk

  1. Procedure
  2. 1) Preheat oven to 450 degrees F.
  3. 2) Sift dry ingredients together.
  4. 3) Mix shortening with pastry blender, fork, or fingertips until mixture resembles coarse crumbs.
  5. 4) Form a well in center of flour and fill with buttermilk.
  6. 5) Mix flour into this, stirring and working until flour leaves sides of bowl and forms a ball.
  7. 6) Place dough on floured surface and knead 5-6 times.
  8. 7) Roll to about 1/4" thickness and cut with biscuit cutter or floured glass.
  9. 8) Place biscuits on ungreased cookie sheet.
  10. 9) Bake at 450 degrees F. 8-12 minutes or until light golden.
  11. 10) Serve with topping of choice – jellies, preserves, marmalade, honey, gravy, etc.

Chili Garlic Noodles

  1. Top Ramen Super Noodles Masala – 2 packs
  2. French Beans 2-4 oz.
  3. Soy sauce – 2 tbsp
  4. 1/2 tsp – Vinegar
  5. 1 cup – Sliced carrots
  6. 1 cup – Spring onions
  7. 1 cup -Green Cabbage
  8. 1 – Red chili, pureed
  9. 1 – Green chili, pureed
  10. 2 cloves of garlic, ground to paste
  11. 1 tsp – Chili powder
  12. Oil – 1 tbsp
  13. Salt to taste
Preparation Method
  1. Cook the Top Ramen Super Noodles in boiling water.
  2. Add cold water to the cooked noodles and drain it.
  3. Apply Oil to your fingers then separate noodles. Set aside.
  4. Heat oil in a thick bottomed pan.
  5. When oil starts to sizzle, add ground chili and garlic.
  6. Once the chili garlic paste is fried, add cut spring onion, carrot, cabbage and French beans.
  7. Add 2 sachets of taste mix and stir fry at high heat for about 4 minutes.
  8. Now add Soy sauce, vinegar, Chili powder, a pinch of sugar and cook the noodles by
  9. Stir frying for 2-3 mins and serve hot.

  5. 2 tbsp – White pepper
  6. 1 tbsp – Onion powder

  2. 1) Boil potatoes until tender – 30-40 minutes
  3. 2) Transfer to mixing bowl, or use a potato masher along with remaining ingredients, keep warm in 200 degree oven until ready to serve.
